Main Ingredients
- Lean Beef Sirloin 450 g
- Canned Tomato 796 ml
- Konjac Noodle 200 g
- Mushroom 200 g
- Green Onion 10 g
Seasonings
- Cooking Oil 5 g
- Salt 0.75 tsp
- Soy Sauce 1 tbsp
- Corn Starch 1 tbsp
- White Pepper Powder 0.25 tsp
- Baking Soda 0.5 tsp
- Oyster Sauce 1 tsp
- Granulated Sugar 1 tsp
- Chicken Bouillon Powder 0.5 tsp
Slice the beef thinly against the grain to break the muscle fibers. Rinse and drain the konjac noodles, slice the mushrooms, and chop the green onion.
In a bowl, mix beef slices with 0.5 tsp baking soda and 0.25 tsp salt. Add enough water to cover the beef, stir lightly, and let it sit for 5 minutes.
After 5 minutes, drain and rinse the beef, then pat dry. Marinate the beef with 1 tbsp soy sauce, 0.25 tsp white pepper powder, 0.25 tsp salt, and 1 tbsp corn starch. Mix well and let it sit for 15 minutes.
Bring a pot of water to a boil, add the marinated beef, and stir gently to separate the slices. Blanch for about 30 seconds until slightly cooked, then remove and set aside.
In a separate pot, heat 5 g of oil over medium-high heat. Add a few green onion slices for aroma, then add the canned tomatoes, followed by mushrooms and konjac noodles. Add about 200 ml of water if needed.
Add 1 tsp oyster sauce, 1 tsp sugar, 0.25 tsp salt, and 0.25 tsp chicken bouillon powder. Stir well, cover, and simmer for about 5 minutes to blend the flavors. Add the beef slices and cook for another 30 seconds to 1 minute, then turn off the heat.
Garnish with green onions and serve.
Discussion
Choose lean cuts like sirloin or tenderloin for high protein and low calories, perfect for low-fat meals.
Cutting the beef against the grain shortens muscle fibers, making the meat tender.
Baking soda tenderizes meat by breaking down proteins, reducing moisture loss during cooking. It’s a crucial step for keeping the beef soft.
Feel free to substitute with other low-calorie vegetables; the main goal is to increase food volume without significantly increasing calories.
Diced tomatoes are convenient, providing chunks of tomato without extra prep.
Blanching the beef only briefly avoids toughness since it’ll cook further with the vegetables. The baking soda helps retain tenderness, even with slightly extended cooking.
Adjust seasonings to your taste—just aim for a balanced and enjoyable flavor.
