In a pot, add all Earl Grey tea and whipping cream, heating over medium until bubbles form along the edges. Remove from heat, add white chocolate, and let cool.
Preheat the oven to 210°C (420°F). Line a 6-inch cake pan with parchment paper for easy removal.
Soften the cream cheese and add granulated sugar, mixing and pressing with a spatula until smooth and lump-free.
Mix the white chocolate into the cooled cream mixture until fully combined. Ensure it’s under 40°C before adding to the cream cheese mixture, then fold together until smooth.
In another bowl, whisk together sour cream and Greek yogurt.
Beat eggs lightly and add to the yogurt mixture in three parts, mixing well after each addition.
Add mascarpone, lemon juice, and corn starch one at a time, mixing thoroughly after each addition.
Add the Earl Grey cream cheese mixture, stirring until smooth. Strain the batter to ensure a silky texture.
Pour the batter into the prepared pan. Place the cake pan in a larger, deep baking dish and fill with 70°C water to halfway up the cake pan. Bake for 20 minutes, then lower the temperature to 150°C (300°F) and bake for another 20 minutes.
After baking, let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
